In the space of two generations and less than fifty years, the Languedoc's wine-based society has imploded. Under pressure from national measures since 1945 and European policy since 1 970, today low quality wine production has virtually disappeared. A historien 's viewpoint puts this change into a longer perspective than is often the case. From this angle, the article highlights the role of wine merchants in resisting a shift to quality production, in particular their practice of mixing local and Algerian wines. Changes in the practices of these merchants participated in the drive towards higher quality wine and thus to the sacrifice of less efficient producers out of step with the market's demands..
